Chefs share the best and worst meals to make with ground beef

  • We asked chefs for some of the best and worst ways to use ground beef in meals.
  • Tacos, soups, and meat-based sauces can be filling and easy to prepare.
  • They said you should avoid using prepackaged ground beef to make burgers or beef stroganoff.

Ground beef is a popular base for many meals, but they aren't all created equally.

So, we asked chefs for some of their favorite things to cook with ground beef and a few recipes they'd probably skip.

Palak Patel, a chef with the Institute of Culinary Education, told Business Insider that one of her favorite easy weeknight dinners is a hearty Bolognese or Italian meat sauce served over pasta.

"It's very easy to make a small or large batch to freeze for later," Patel said, "because all you have to do is combine ground beef with herbs and tomato. You can cook it slowly on the stovetop, slow cooker, or even an Instant Pot."

For a lighter version of this dish that's perfect for warmer months, use fresh tomatoes instead of canned for the sauce.

Jessica Randhawa, a chef with The Forked Spoon, told BI that ground beef can be a scrumptious taco filling.

"Ground-beef tacos are easy to make at home and can be full of flavor," she said. "Plus, you can control the fat content based on your personal needs by choosing leaner or fattier ground beef."

You can make an easy taco filling by simmering ground beef with tomato sauce and spices like paprika, garlic powder, and cumin. Add chopped vegetables or shredded cheese for extra flavor.

Cajun rice, also known as dirty rice for its color, is a traditional Louisiana Creole dish made with seasoned rice, chopped peppers, and spiced meat such as ground beef.

"Cajun rice is a great way to use ground beef," Randhawa said. "Though it's usually known as a spicy dish, you can omit spicy ingredients like jalapeño if you're sensitive to heat."

In addition to being a versatile meal that can easily be scaled up or down to feed groups of different sizes, Cajun rice is an ideal way to use up different cuts of meat — toss in leftover steak, sausage, or even chicken gizzards.

Mila Furman, a private chef and recipe developer with Girl and the Kitchen, told BI that meatballs are an ideal way to use high-quality ground beef.

"Meatballs are one of the most versatile meals to have in your [arsenal] as a chef," Furman said. "They're super simple to put together and will always be a hit for the whole table."

Whether you're making classic meatballs with tomato sauce or whipping up a batch of creamy Swedish meatballs, using ground beef with a slightly higher fat percentage will keep them juicy and tender.

If you're struggling to think of ways to use up a small portion of leftover ground beef, putting it in a soup may just be the answer.

"Using ground beef in soups isn't just for chili," Furman said. "Add ground beef — especially in the form of leftover meatballs — into soup with plenty of hearty vegetables for a complete meal."

A great way to infuse prepackaged ground beef with tons of moisture and flavor is to bake it into a lasagna.

"Lasagna is a versatile ground-beef meal because it's very hearty and works well with all kinds of veggies, like mushrooms, squash, or corn," Patel said. "Plus, you can add a fried egg on top to turn leftovers into a weekend brunch."

On the other hand, you shouldn't use a typical package of ground beef to make burgers.

Patel said that using an average grocery-store package of ground beef to make burgers is a mistake.

"It is important to know the type of beef that you're buying," Patel said. "Prepackaged grocery-store ground beef is not processed daily or in-house, so the resulting burgers tend to be dry and chewy."

Instead of grabbing a package of ground beef, ask the deli or butcher to grind a portion of quality beef for you. Cuts such as chuck steak usually have a better ratio of fat to lean meat, which makes for a juicier burger.

Beef stroganoff is traditionally made with sautéed pieces of whole beef, but some recipes call for ground beef instead. Unfortunately, this variation is hard to get right.

"This is a very classic recipe for ground beef, but often the beef is left bland and dry while the delicate egg noodles are overcooked," Patel said.

Patel added that if the ratio of cream to beef is not balanced, this dish can become overly creamy and even soggy.

Steak tartare is tricky to prepare at home, and it isn't always safe to eat.

Steak tartare is made with lightly seared or raw ground beef, usually served as a patty topped with a raw egg yolk.

Randhawa said home chefs — and restaurant diners — should generally avoid steak tartare for safety reasons.

"Unlike other raw-meat recipes from around the world, steak tartare does not include an acidic citrus juice," Randhawa said. Acidic citrus juice can cause meat to seem somewhat cooked, but it doesn't actually make it entirely safe to eat.

"Uncooked meat can have both dangerous parasites and potentially life-threatening bacteria," Randhawa added.

You may want to avoid adding warm ground beef to chilled salads.

Some salad recipes call for ground beef as a topping. But the temperature difference between warm ground beef and a cold salad can cause the melted fats in the meat to solidify.

"Do not put ground beef in your salads if you can help it," Furman said. "You often end up with a situation where beef fat leaks down through the greens and congeals."

You could avoid this stomach-turning scenario by chilling the cooked ground beef beforehand.

I ate at Braum's, a beloved Southern fast-food chain. Its chicken strips were as good as Chick-fil-A's.

The West Coast has In-N-Out. The Midwest has Dairy Queen. I'd argue the South has Braum's Ice Cream and Dairy Store.

In 1933, Henry Braum started a small butter plant in Emporia, Kansas, which expanded to include milk and ice cream production. In 1968, Henry's son Bill opened the first official Braum's store in Oklahoma City.

Today, the family-run business has more than 300 locations across Arkansas, Kansas, Missouri, Oklahoma, and Texas. According to the company, every store is located within a 300-mile radius of its processing plant in Tuttle, Oklahoma.

Braum's is best known for its wide range of ice cream and frozen yogurt, from classic flavors like vanilla to stranger concoctions like pineapple upside-down cake. But it's more than an ice cream shop — it also has staples of the American diet like cheeseburgers, chicken strips, shakes, and malts.

One of Braum's locations sits about two miles from my childhood home in Fort Worth, Texas. When I was a kid, on Fridays after a long day of work, my dad would bring home a tub of ice cream. If I were really lucky, we'd go to the store. Together, we'd sit, ice-cream cone in hand, in silence, savoring the flavors.

I wanted to see if Braum's still served up old-school charm and yummy food, so my husband and I took a trip to the closest one near us in Dallas. Here are some items I tried from the menu — some I'd order again, and others I'd probably skip.

Unlike fast food giants like McDonald's and Burger King, which have embraced modernity in both their branding and menu presentation, Braum's has done the opposite. It has retained its cozy, classic vibe, making it feel both familiar and comforting.

Maybe that's what makes it special.

When I visited the store, I spent a lot of time reminiscing about the times my dad and I shared there. It all felt so nostalgic.

Braum's has dozens of ice cream flavors to choose from. But it is also a grocery store with a small market. Customers can buy everyday items like bananas, tomatoes, onions, and even hamburger buns if they'd rather grill their own at home.

Braum's sells its ice cream in various sizes, but most tubs contain three pints. Each tub is typically priced under $5 — a steal compared to other brands.

A single pint of Blue Bell ice cream is sold for $3.97 (excluding tax) at Walmart, and a single pint of Ben & Jerry's ice cream at Target is $4.99, according to both companies' websites.

The company sells traditional flavors like vanilla, strawberry, and chocolate, but it also has quirky options like bubble gum and Mother's Circus animal cookies.

I wouldn't recommend the latter — it was too sweet for my taste buds, and didn't have enough animal crackers.

Ice cream is typically made with dairy from cream, whereas frozen yogurt is made from cultured milk. On most days, I'd choose frozen yogurt — which might be a controversial opinion.

While I haven't tried all of Braum's frozen yogurt flavors, their vanilla cone always hits the spot. I doubt I'll ever get around to trying the pineapple upside-down cake flavor, though.

Sugar-free ice cream isn't really my cup of tea, but I understand why some people prefer it or choose it for dietary or medical reasons.

If that's you, then you're in luck — Braum's offers many sugar-free flavors.

I have to admit the vanilla chunk chocolate tub looked pretty tempting.

My husband and I ordered a lot of food.

To get the full Braum's experience beyond ice cream, we ordered about 10 different items from the menu:

  • A double quarter pound sweet 'n spicy Gouda burger combo meal with medium fries and a large sweet tea — $8.89
  • A cheeseburger combo meal with medium fries and a large strawberry shake — $8.29
  • Four-piece chicken strips — $5.19
  • A grilled chicken sandwich — $4.79
  • Medium chili cheese fries — $4.64
  • A medium strawberry malt shake — $1.99

I was surprised by how good Braum's chicken strips were.

In the chicken strips war, restaurants like Chick-fil-A and Zaxby's usually reign supreme. But I'm throwing Braum's into the fight.

Braum's strips were crispy on the outside, yet still soft inside. I also appreciated that they weren't overly salty — just the right amount. For me, they rivaled Chick-fil-A's.

I was probably most excited to try the chili fries. Crispy potatoes dressed in perfectly melted cheese and sauce— what more could anyone ask for?

Well, in my case, a bit more seasoning. Ultimately, they tasted bland, and it felt more like I was eating canned beans on fries than actual chili.

My husband and I split the double quarter pound sweet 'n spicy Gouda burger and the cheeseburger.

While I thought the Gouda burger was good — and a bit spicy — it didn't quite compare to Braum's traditional cheeseburger.

It wasn't fancy — just meat, buns, lettuce, tomato, and cheese — but it felt classic, exactly what I imagine when I think of a good burger.

The grilled chicken sandwich was all right. It didn't quite compare to a sandwich I'd get at Chick-fil-A, but I had no trouble finishing it. For $4.79, I'd say it's worth the price.

After dinner, my husband and I went back to the counter to order ice cream.

He bought a double scoop sopapilla cheesecake sundae for $3.79, and I got a small chocolate and vanilla frozen yogurt cone for $1.45.

His sundae tasted like the real deal. The cinnamon-flavored ice cream sat on top of a spongy cake, draped in golden caramel. I think it's perfect for someone with a sweet tooth.

However, the frozen yogurt cone was right up my alley. It was simple and sweet, and the flavors weren't too overpowering.

We bought so much food that we had to take it home.

I left the restaurant full, but not without taking a to-go bag. The next day, my husband and I devoured our leftovers for lunch.

I'll be visiting again soon.

While the burgers and sandwiches at Braum's were good, the ice cream and frozen yogurt were what made the visit stand out among other chains.

Overall, going back to Braum's was a sweet experience. It was nice to try new-to-me foods, reminisce about my childhood, and create new memories with my husband.

Residents of the 45 states that don't have a Braum's are definitely missing out.

I tried Guy Fieri's and Gordon Ramsay's quick burger recipes, and the best one was easier to make

  • I made both Gordon Ramsay's and Guy Fieri's 10-minute burger recipes. 
  • Fieri's recipe is simpler than Ramsay's, which features far more ingredients and steps. 
  • I loved both recipes, but Fieri's burger took the top spot in my celebrity-chef showdown.

Guy Fieri and Gordon Ramsay both have 10-minute burger recipes, so I decided it was time for a little showdown in honor of the holiday weekend. 

I discovered Ramsay's bacon cheeseburger recipe in his cookbook "Ramsay in 10," which includes 100 recipes that only take 10 minutes. And it was Fieri himself who gave me his burger recipe when I asked for his top burger tips

"This may be a more complicated answer than you bargained for, because it's not just about a burger recipe," Fieri told me. "It's about the execution of the whole deal. You can get down with whatever toppings you want, but the basics have to be covered." 

I whipped up Ramsay's and Fieri's recipes at home to decide who truly had the best — and quickest — burger. Here's how it all went down.

To make Fieri's perfect burger at home, you'll need: 

  • Ground beef (Fieri recommends 80% lean, 20% fat)
  • American cheese slices 
  • Brioche buns 
  • Lettuce
  • Tomato 
  • Onion 
  • Pickles
And there's very little prep.

All you have to do is get the veggies ready. Fieri told me it's important to shred the lettuce, slice your tomato, and "cut those white onions so thin that they only have one side." 

Per Fieri's recommendation, I also buttered the buns and popped them into the oven so they could get nice and toasty.

Fieri said it was essential that I cook my burgers "on the hottest griddle or cast iron pan you can get." 

"You smash it down hard, we're talking a half-inch thick," he added.

The Mayor of Flavortown also told me it was important to let my patty crisp up to "get all that delicious caramelization going." I waited until the sides of my patty got crunchy before I flipped it over.

Fieri loves using American cheese slices on burgers because "they melt really well," he told me. 

Then, it was time for Fieri's special cheese-melting trick.

First, I sprayed some water around my burger. Then, per Fieri's instructions, I had to place "some sort of dome or metal bowl" over my patty. 

"That steam will melt your cheese before you overcook your burger," he told me. 

I didn't have a metal bowl on hand, so I used an old Marie Callender's pie tin I found in my parents' kitchen.

Less than 10 minutes had gone by, and it was already time to build my burger.

What impressed me most about Fieri's burger was how juicy it tasted, even without a single condiment. The patty, which was perfectly cooked, truly stood on its own. It had just the right amount of crispiness and was packed with flavor. 

The brioche bun added a nice hint of sweetness to the overall taste, and the beautifully melted cheese tasted almost buttery. The burger was pure perfection.

To make Ramsay's cheeseburgers at home, you'll need: 

  • Ground beef
  • Brioche buns 
  • Bacon 
  • Cheddar cheese 
  • Egg yolks 
  • Frozen red chile
  • Tomato

  • Mayonnaise 
  • Sriracha 
First, I prepped my burgers.

I added two egg yolks to my patty, plus the chile.

I added 16 ounces of ground beef into a bowl — enough to make four burgers — along with two egg yolks. I then sprinkled salt and freshly ground black pepper on top, along with one grated frozen chile. 

I used my hands to mix everything together and made four patties that were each around 1 inch thick. 

"Remember that the thicker you make the patties, the longer they will take to cook," Ramsay writes in his book. "So if you want these on the table in under 10, press your burgers until they are a little thinner for a quicker cooking time."

I let my patties cook for four minutes over medium-high heat, seasoning them with some more salt and pepper.  

Then, I added my bacon and onion slices, increased the heat to high, and let everything cook together.  

As my burgers cooked, I prepped Ramsay's special sauce.

I mixed four tablespoons of mayonnaise with two teaspoons of Sriracha and some salt and pepper. 

I also toasted my buns and prepped my veggies.

I sliced one tomato and washed some Gem Lettuce leaves for the bottom of my burgers. I also toasted my buns in the oven for about two minutes. 

Then, I flipped the burgers, bacon, and onions.

I let them cook for another five minutes. Since my bacon and onion slices were ready before my burgers, I took them off the griddle and placed them on a plate lined with a paper towel. 

It was time to add the cheese — and Ramsay uses the same trick as Fieri.

Ramsay also recommends covering the patties with something to help the cheese melt. But, unlike the Mayor of Flavortown, he doesn't spray the burger with water first. 

Instead, Ramsay's recipe instructed me to first add some butter to the griddle and place the cheese slices on top of my burgers. Then, he recommends covering the patties with a lid or an upturned saucepan. I used a metal bowl, which perfectly covered two of my patties.

This is such an easy trick, and clearly worked well for both Fieri's and Ramsay's burgers. I now consider it an essential step to make a great cheeseburger at home.

First, I spread some of Ramsay's Sriracha mayonnaise on my bottom buns. Then, I added the lettuce, tomato, and onion slices, plus my cheeseburger and bacon. 

After I threw a few more onion slices on top and spread more sauce on my top buns, my burger was ready to go.

There's no denying how impressive this burger looks, and it tasted great, too. The patty was plump and juicy, and I loved the kick of heat from the Sriracha mayonnaise and grated chile. 

The bacon and onion also gave some nice crunch and savoriness, while the tomato and lettuce added a dose of freshness.

Both Fieri and Ramsay have fantastic burgers, but the Mayor of Flavortown takes my top spot.

While you've got to keep track of quite a few different steps to make Ramsay's burger happen in 10 minutes, Fieri's recipe is far simpler — and still delivers fantastic results. 

Plus, I couldn't believe Fieri's burger tasted so good without any sauce or condiments. I've found his burger to outshine those I've had from places like Five Guys, and it's comparable to the gourmet burgers I've tried all over New York — for a fraction of the cost.
